Kathy and Hugh Shiels founded Côte Bonneville with one goal in mind: to present the best expression of our DuBrul Vineyard each vintage year. They harvest Cabernet Sauvignon, Merlot and Cabernet Franc at the point of optimal ripeness, vinify each lot separately, and then age the wines in new French oak barrels. After six months the individual wines are assessed and the blends are assembled. Côte Bonneville is barrel-aged for 24 months, Carriage House for 20 months. After bottling, the wines are allowed to develop further prior to release. Beginning with the selection of vineyard rows, we carefully manage the vines, irrigation, thinning, hand picking and sorting, vinification, selection of French oak barrels, blending and aging to provide you with the best wine our unique site can produce. |
